fix(mealie): support v3.15+ Nuxt 4 migration

Browse Source 
- Unpin version from v3.14.0 to latest
- Use find to locate site-settings.vue dynamically (Nuxt 4 moved
  pages/ to app/pages/)
- Update both install and update scripts
